Feijão Custard Tarts from Vila by Leonor Santos

Ingredients

  • 500ml sugar (2 cups);
  • 500g grated white beans;
  • 125g butter;
  • 3 tablespoons wheat flour (without yeast);
  • 12 egg yolks;
  • 2 whole eggs;

Preparation and Cooking

  • In a saucepan, add sugar, melted butter, flour, grated white beans, egg yolks, and the two whole eggs;
  • Mix all the ingredients thoroughly;
  • On low heat, continue stirring until it comes to a boil;

Feijão Custard Tarts from Vila Molds

Filling the Molds

  • Grease the molds with butter;
  • Fill the molds with small amounts of the prepared mixture;
  • Use a spoon to smooth the surface of the mixture.

Baking the Tarts

  • Preheat the oven to 170-180ºC (338-356ºF);
  • Bake the tarts for about 30 to 35 minutes or until they turn golden brown.

Once Cooled

  • Sprinkle with powdered sugar.
