,Queijadas de Feijão are another of the traditional sweets found in the Gastronomy of the Azores.
Today we’re sharing Leonor Santos’s version, known as Queijadas de Feijão da Vila.

Ingredients
- 500ml of sugar (2 cups);
- 500g puréed white beans;
- 125g butter;
- 3 tablespoons of all-purpose flour;
- 12 egg yolks;
- 2 whole eggs;
Method
- In a saucepan, combine the sugar, melted butter, flour, puréed white beans, egg yolks, and the two whole eggs;
- Mix all the ingredients together well;
- Over low heat, continue stirring until the mixture comes to a boil;

Filling the tins
- Grease the tins with butter;
- Pour small amounts of the mixture into the individual tins;
- Using a spoon, smooth the top of the mixture.
Baking the tarts
- Preheat the oven to 170-180ºC;
- Place the tins in the oven and bake for about 30 to 35 minutes, or until golden brown.
After they have cooled down completely
- Sprinkle with icing sugar;
