Since the Açorean Pineapple is a unique fruit produced on the Island of São Miguel, we present to you today the recipe for a well-known cake: Açorean Pineapple Cake / São Miguel style.

Recipe for São Miguel Style Pineapple Cake
On the program Praça da Alegria, on RTP 1, Cristina Manso Preto presented her recipe for the Açorean Pineapple Cake.
Ingredients
For lining the pan/base
- 240g Sugar;
- 4 + 3 tablespoons of water;
- Açorean Pineapple (peeled and sliced into rounds or half-moons (without the core));
For the cake
- 3 eggs;
- 230ml Milk;
- 90g Margarine (melted);
- 525g Wheat Flour;
- 335g Sugar;
- 1 tablespoon Baking Powder.
Preparation
- Start by making the caramel: Combine the sugar and water and let it simmer until it turns into caramel;
- To prepare the liquid part of the batter, beat the three whole eggs in a bowl.
- Add the milk and melted butter;
- In another bowl, combine the wheat flour and sugar, and mix well;
- Add the previously prepared liquid (from the first bowl) to the dry ingredients (flour and sugar) and mix well.
Placing in the pan / for baking
- In a circular baking pan, add the previously made caramel;
- Place the pineapple slices at the bottom of the pan, arranging them to fill the base.
- Pour the batter into the pan and bake at 180ºC for 1 hour.
